Bee's Knees
The classic sour formula of citrus juice, syrup and a spirit offers endless possibilities. The Bee's Knees, a cocktail from the 1920s, is one example.

Steps to make the drink
- Put ice in a Nick & Nora glass to chill it.
- Put the gin, lemon juice and syrup in the shaker.
- Add plenty of ice to the shaker.
- Shake for about 20 seconds.
- Tip the ice and meltwater out of the glass.
- Strain the cocktail through a bar strainer into the glass.
- Garnish with lemon zest.
Honey, with all its variety, can give a cocktail flavours you'll never get from simple syrup or cane sugar syrup. The range from forest honey to lime blossom and rapeseed honey alone is enormous. Factor in different gins and you could easily make a dozen of these drinks, each tasting different. But all these Bee's Knees have one thing in common: they're incredibly delicious and even quicker to make.
The drink is credited to Frank Meier, who worked at the Hôtel Ritz in Paris in the 1920s.
