The White Lady is a gin cocktail that's really a riff, or remix, on the Sidecar, which uses brandy instead of gin. You can make the White Lady foamier if you like by adding egg white. Half an egg white is enough for this quantity if you don't want a very thick layer of foam. As ever, it's optional: use aquafaba instead, or leave it out altogether.
The mix of gin, orange liqueur and tart lemon makes this a wonderfully fresh cocktail, best enjoyed ice cold. The White Lady makes her best impression when served cold. As with so many gin cocktails, the foundation is a balance of spirit, sweetness and acidity. A harmonious, easy-to-make drink that leaves you wanting more.
