Clarified Cherry Sour

If you like Black Forest gateau, this sour variation should be right up your street.

Ingredients

  • 3 teaspoon
    Demerara sugar
  • 60 ml
    Gin
  • 55 ml
    Lemon juice
  • 10 drop
    Peach bitters
  • 5 ml
    Luxardo Maraschino
  • 10 ml
    White vermouth
  • 85 ml
    Whole milk
  • 35 ml
    Aquafaba
  • to garnish
    Maraschino cherries

Steps to make the drink

  1. Stir the sugar, lemon juice, bitters and vermouth until the sugar dissolves.
  2. Add the Luxardo Maraschino.
  3. Pour the mixture into the milk, not the other way round, and stir. Leave for 2 minutes, then stir again.
  4. Pour the lumpy mixture into a coffee filter. The first liquid through may still be cloudy; just pour it back into the filter. Let it drain in its own time, which can take 30–45 minutes depending on the quantity.
  5. Put the clarified mixture and aquafaba in the shaker.
  6. Dry shake for 20 seconds.
  7. Add ice and wet shake for another 15 seconds.
  8. Strain through a bar strainer into a chilled glass.
  9. Garnish with one or more maraschino cherries.

Clarifying a cocktail helps it keep longer. You can prepare it ahead and serve several to guests, for example, without a long wait for the filter at serving time. The proteins from the milk also make it foamier when shaken.
