Clover Club
Raspberries are a wonderful fruit that pairs beautifully with gin. That's why the Clover Club is a quick, easy cocktail that almost everyone enjoys.

Steps to make the drink
- Put the gin, lemon juice and raspberry syrup in a shaker with the egg white and ice.
- Shake hard until everything's properly cold, for at least 20 seconds.
- Strain into the cocktail glass.
- Chill a cocktail glass with ice.
- Garnish with 3 raspberries.
- Done. Cheers!
If you haven't got raspberry syrup, use simple syrup and add 6–7 fresh raspberries to the shaker instead. It tastes great, too. Use a bar strainer when pouring so the fruit pieces and seeds don't end up in the glass.
Want to make your own syrup? It's easy: put 1 cup of sugar, ½ cup of water and ½ cup of fresh raspberries in a saucepan. Stir over a medium heat until the sugar dissolves and the mixture comes to the boil. Reduce the heat to low and crush the raspberries. Then strain everything into a bottle. Add a tablespoon of vodka to help it keep longer, and you've made your own raspberry syrup. It should keep in the fridge for 3–4 weeks.
