Plum Gin Sour

The classic Gin Sour is a good starting point for cocktails. In this recipe, plums add a new flavour.

Ingredients

  • 60 ml
    Gin
  • 25 ml
    Lemon juice
  • 30 ml
    Plum syrup
  • 30 ml
    Aquafaba
  • plenty
    Ice

Steps to make the drink

  1. Add all the ingredients except the ice to the shaker.
  2. Dry shake for 20 seconds.
  3. Now add plenty of ice to the shaker.
  4. Wet shake for 20 seconds.
  5. Strain the cocktail into the glass using a bar strainer.
  6. Garnish with a maraschino cherry or a dried plum.

Plum syrup

Plum syrup is easy to make yourself. Take six dried plums and 150 ml of water. Add 150 g of sugar and bring everything to a good boil. Once the plums are soft, crush them and stir well. Then pour the liquid through a bar strainer into a container or small bottle. Let it cool slowly, then add a teaspoon of vodka or another spirit to help the syrup keep longer. You can keep it in the fridge for around 2–3 weeks and use it as you go.

The recipe

The rich fruit aromas of ripe plums work beautifully with an aged gin. The acidity provides a lovely contrast: a little interplay for the taste buds. If you prefer egg white, you can use it instead of aquafaba.
