Tomato-Bacon Negroni (fat washed)
If you fancy a Bloody Mary with gin and a generous touch of bacon, you'll like this Negroni.

Steps to make the drink
- Mix the gin and tomato paste thoroughly and leave to infuse for a few hours.
- Filter through a double layer of tea filter.
- Add the vermouth and Campari.
- Fry the bacon and let it cool to about 45°C.
- Add the bacon to the Negroni, including the fat and oil.
- Mix everything thoroughly and leave for a few hours.
- Put the container in the freezer.
- Once everything's thoroughly chilled, pour it through a fresh filter.
- Bottle it, or pour it straight into a mixing glass with ice and stir for about 60 turns.
- Instead of orange, try a little fresh thyme in your Negroni; its flavour works beautifully here.
- Leave out the bacon and you can make a Tomato Negroni that doesn't need freezing.
Start the gin and tomato paste infusion.

Filter the mixture twice.
Fry the bacon.
Put the cooled bacon in a bottle with the Campari, gin and vermouth.
Put it in the freezer and let it chill thoroughly.
Filter again while cold, then bottle it until you're ready to serve. Use it as soon as possible.
